Living in the land of nasi lemak, roti canai and char kuey tiao may be a wonderful thing for the appetite, but sometimes one just wants to give the old tummy a rest (especially when the buttons on one’s pants threaten to pop). Yep, sometimes even a carnivore like me will stoop to eating leaves.
Well, not just leaves, lah. I don’t do salads like that!
So what I did was boil some shrimps (deshelled) till just cooked, drained them and put ice over the little guys. Then I tore up some salad greens, broke a banana into smallish chunks, cut some cheese into cubes (I tried out a Melon & Mango Cheese, which was absolutely yum!), and sprinkled in some walnuts for their woodiness (good to have wood in the mornings). Threw in the shrimps, without the ice, of course, and tossed everything in yoghurt (Marigold’s 0% Fat Peach & Mango Mix, if you must know).
Shrimp salad in yoghurt, with bananas, walnuts, Melon & Mango Cheese
And as simple as that, I had a Tropical Shrimp Salad to set me on a fresh and crisp start to the day. Recommended served with a glass of orange juice, and accompanied by Koop Island Blues by Koop, featuring Ane Brun… you might just forget it’s a weekday and you need to be off to work!
